You could set up a samba server on a third machine, and then show
that both the MS Windows machine with MS Office and the Linux
machine with whatever office could both load the same files. It'd
be an even better demo if the Linux machine were noticeably quicker.

Yeah, I wouldn't run a UNIX machine as a client on an smb network
either, but that'd mock up a pretty typical situation a lot of
places and show that you really could put Linux on the machine on
your desk instead of MS Windows.
