It's worth updating, mostly for the up-to-date software.
Occasionally things break, but nothing fatal usually ever does.
I apt-get dist-upgrade on a more or less daily basis, and I've
never regretted it. It's also probably a good idea to have your
/etc/apt/sources.list include deb sites for all your favorite
software; this is probably more important than the release of
Debian itself.
I use unstable as a matter of course; I don't even bother with
keeping track of releases, as apt provides such a smooth upgrade
path they don't really matter to me anymore.
