I been using unstable debian for so long that I don't exactly remember
what's in Potato versus Woody, but if you don't have them already, some
cool things in Woody:

New network configuration: each interfaces has an entry for it's settings
and you can bring each one up and down with ifup/ifdown.

Debconf: A menu-driven configuration system that makes configuring new
packages easier.

KDE2 was just added to woody.. it's pretty awesome. As far as the
packages themselves, you just get newer, more up-to-date versions of the
software. I've had a few minor issues with packages being broken (mostly
dependency stuff), but I was able to fix them and they were fixed by the
next time I apt-get dist-upgrade'd. I'd definitely say go for
it. Unstable in the context of Debian has a whole different meaning than
with other distros.
